I figured out what was confusing me and you all are going to laugh at me, I just know it.
For some screwy reason I thought Mysterio (Alexander Kaslov) was signing a photo of himself!
That was just toooo many name changes for me, lol!

I would assume that after the incident at Area 51, Minker Sr left the military and assumed another name as Professor ......... to have a career in the private sector as a biology teacher.. which is where we see him in the film...

Josh's dad was said to be on the run by Mysterio, and eventually himself. As Rockyette sited in the eval, changing the name is a good way to hide, and Minker, Sr. apparently had every reason to stay under the radar, IMHO.
